Energy-boosting Apple-Strawberry Cider Smoothie with Ashwagandha Powder

I wake up to teach early in the mornings (these days I am fully booked from 6:30-9), and let’s just say–early nights are not Jeff’s and my strong suit. We’ve also had a lot going on lately–perhaps more on that later. All that to say, it’s either eat foods in hope it will give me energy (ice cream gives energy, right??), nap (always preferable), or workout. I’m hoping to do all three this evening, but I chose to fuel my body first. Seeing as I haven’t been to Aldi in a couple weeks and frozen berries are all I have on hand (and the peaches are reserved for a cobbler tonight…which I really need to remember to schedule in to this busy napping-running-feedback-writing evening), I pulled out what I had available, and this is what resulted: a really lovely, clean tasting, sweet smoothie with flavors of fall.

Autumn Apple-Strawberry Smoothie

Yield: 1 large or two medium servings

Ingredients:

Layer in your blender/bullet in the following order: (greens on bottom, then solids, powder/s, and liquid)

  • 1C baby spinach (can use more based on preference)
  • 3/4 fresh apple
  • 6-7 frozen strawberries
  • 1/2-3/4 C apple cider–preferably local
  • 1/4 C black cherry juice (feel free substitute for another fruit juice, more cider, or water)
  • 1/4 t Ashwagandha Root Powder (for natural energy! I use Feel Good Organics from Amazon)+

Blend and enjoy!

**it may or may not only be 3/4 of an apple because apples are fun to snack on while preparing the smoothie**
